The 0.63 hectares of Syrah vines form a part of the 2.5 hectare original plantings by David's father, Attilio, in 1972. This very special parcel of fruit has been an integral part of the Profondo blend, a homage to Attilio, since its inuagural release in 1999, and remains so today. Since 2015, a small portion of the Syrah has been bottled separately. This is pure essence of old vine Syrah, produced using 10% whole bunch/90% whole berry fermentation and 9 months in old French oak barriques. This is gorgeously scented, with violet, blueberry and white pepper, deeply intense flavour and a lovely backbone of full fine tannins enhanced by a saline minerality.
